FOR THE SALAD
4 ounces arugula
1 fennel bulb, sliced paper thin with your 4-in-1 Glass Mandoline
1 Bartlett pear, sliced thin
½ of a head of radicchio, sliced thin
¼ cup dried cherries
¼ cup pistachios, roasted
¼ cup gorgonzola cheese
FOR THE DRESSING
¼ cup good olive oil
2 tablespoons champagne vinegar
2 tablespoons fresh orange juice
1 tablespoon Dijon mustard
1 tablespoon honey
1 garlic clove, minced
¼ teaspoon sea salt
¼ teaspoon freshly ground black pepper
DIRECTIONS
Layer salad ingredients nicely on a decorative platter. Whisk dressing components together and pour over salad just before serving. Enjoy!
