Five Spice Pickled Carrots

Five Spice Pickled Carrots

We used our Pickling Set to create these delicious and crunchy Chinese Five Spice Pickled Carrots. 

 

Ingredients:

  • ½ cup Distilled White Vinegar
  • ½ cup Water
  • ¼ cup Fresh Lemon Juice
  • ½ tsp Kosher Salt
  • 2 TBS Sugar
  • 1 tsp Five Spice Powder
  • ½ tsp Ground Ginger
  • 1 tsp Whole Peppercorns
  • 1 Clove Garlic, peeled & sliced thin
  • 3 medium Carrots

Directions:

  1. Wash, trim and peel carrots then cut into two equal pieces, about the height of your mason jar
  2. In a small saucepan, bring all ingredients except carrots to a boil, stirring to dissolve sugar.
  3. Reduce heat and simmer liquid for 5 minutes
  4. Carefully pour  hot liquid into mason jar with carrots
  5. Add enough liquid to cover the top of carrots
  6. Gently tap the jar to remove air bubbles
  7. Seal the jar by tightly screwing the lid on
  8. Let cool to room temperature
  9. Refrigerate for at least 10 hours
  10. Enjoy!
