We used our Pickling Set to create these delicious and crunchy Chinese Five Spice Pickled Carrots.
Ingredients:
- ½ cup Distilled White Vinegar
- ½ cup Water
- ¼ cup Fresh Lemon Juice
- ½ tsp Kosher Salt
- 2 TBS Sugar
- 1 tsp Five Spice Powder
- ½ tsp Ground Ginger
- 1 tsp Whole Peppercorns
- 1 Clove Garlic, peeled & sliced thin
- 3 medium Carrots
Directions:
- Wash, trim and peel carrots then cut into two equal pieces, about the height of your mason jar
- In a small saucepan, bring all ingredients except carrots to a boil, stirring to dissolve sugar.
- Reduce heat and simmer liquid for 5 minutes
- Carefully pour hot liquid into mason jar with carrots
- Add enough liquid to cover the top of carrots
- Gently tap the jar to remove air bubbles
- Seal the jar by tightly screwing the lid on
- Let cool to room temperature
- Refrigerate for at least 10 hours
- Enjoy!
