Homemade Mayonnaise

Ingredients:

  • 1 large egg yolk
  • 1 Tbsp Dijon or yellow mustard
  • 1/4 tsp kosher salt (adjust to taste)
  • 1 cup (240 ml) neutral-flavored oil (grapeseed, safflower, or canola work best)
  • 1 tsp fresh lemon juice (optional)

Directions:

  1. Remove the condiment attachment from the bowl, leaving the cutting blades in place.
  2. Add the egg yolk, mustard, salt, and lemon juice (if using) to the bowl.
  3. Attach the condiment attachment to the cutting blade.
  4. Fill the oil reservoir to the upper line.
  5. Secure the lid on the oil container and attach the pulling lid to the bowl.
  6. Pull the handle for approximately 60 seconds, or until the oil is fully dispensed and the mixture has a creamy mayonnaise consistency.

Caesar Salad Dressing

Ingredients:

  • 3 oil-packed anchovy fillets, chopped
  • 1 large garlic clove, chopped
  • 3/4 tsp kosher salt (adjust to taste)
  • 1 large egg yolk
  • 2 Tbsp fresh lemon juice
  • 3/4 tsp Dijon mustard
  • 1/4 cup plus 2 Tbsp vegetable oil
  • 3 Tbsp Parmesan, finely grated

Directions:

  1. Remove the condiment attachment from the bowl, leaving the cutting blades in place.
  2. Add the egg yolk, mustard, salt, lemon juice, garlic, and anchovies to the bowl.
  3. Attach the condiment attachment to the cutting blade.
  4. Fill the oil reservoir to the upper line.
  5. Secure the lid on the oil container and attach the pulling lid to the bowl.
  6. Pull the handle for approximately 60 seconds, or until the oil is fully dispensed and the dressing is smooth and emulsified.
