CAJUN MARINADE
Ingredients
Makes 3/4 cup
4 scallions, roughly chopped
1 tablespoon smoked paprika
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon onion powder
½ teaspoon cayenne pepper
1 teaspoon dried leaf oregano
1 teaspoon dried thyme
1 tablespoon garlic powder
1 tablespoon brown sugar
1 tablespoon whole grain mustard
2 tablespoons ketchup
¼ cup apple cider vinegar
½ cup olive oil
Directions
Grind scallions in mortar. Add spices and blend thoroughly with pestle. Add mustard, ketchup, vinegar, and olive oil. Cover and mix.
CHILI HONEY VINAIGRETTE
Ingredients
Makes 1/2 cup
1 garlic clove
1 inch ginger
Juice of ½ lime
1 teaspoon chili flakes
1 teaspoon black pepper
½ teaspoon salt
2 tablespoons honey
2 tablespoons rice vinegar
2 teaspoons soy sauce
¼ cup grapeseed oil (or other unflavored oil)
Directions
Combine all ingredients in SpiceBall until desired consistency.
ZA'ATAR DRESSING
Ingredients
Makes 1/2 cup
1 tablespoon cumin seeds
1 tablespoon coriander seeds
1 tablespoon sesame seeds
1 tablespoon sumac
1 tablespoon thyme
½ teaspoon salt
2 tablespoons lemon juice
¼ cup olive oil
Directions
In a skillet over medium heat, toast cumin seeds, coriander seeds, and sesame seeds. Stir until fragrant and a shade darker, about 3-5 minutes. Grind seeds in mortar. Add remaining ingredients. Cover and mix.
CITRUS COMPOUND BUTTER
Ingredients
Makes 1/2 cup
1 stick (8 tablespoons) unsalted butter, room temperature
2 tablespoons fresh lemon juice
2 tablespoons fresh orange juice
Zest from one lemon
Zest from one orange
1 garlic clove
¼ teaspoon salt
Directions
Grind zest in mortar. Add remaining ingredients and mix.
